It is time to say farewell to 2016. This is the time when we should reflect on all of the wonderful memories we have made this year, and look forward to many more great celebrations with our loved ones in 2017. A few memorable things in 2016 for me were celebrating my parents' 40th anniversary, receiving my dream car from my husband for our 6th wedding anniversary, taking the kids to Disneyland and Disney Aulani for the first time, and best of all, making this blog live! On the other hand, things I would like to work on in 2017 are to spend more quality time with my parents (I cannot imagine life without them), to spend more alone time with my husband, to spend more time with the kids (by sacrificing blogging time), to read more clinical journals to further my Pharmacy knowledge (after all, I need to know more than patients), and finally, to improve on my cooking and baking skills.

This fancy treat looks even more beautiful in red. It is not easy to achieve this color without being careful not to ruin the merginue batter, but it is definitely do-able. Not only the look, but as you taste one of these red velvet macarons, you will fall in love with them. Christmas was a breeze for me, filled with one family party after another. For my family, it is indeed the "most wonderful time of the year" with delicious foods ranging from American cuisine of roasted prime rib eye, seafood bruschetta, clam chowder soup to Vietnamese salad rolls and Tom Yum hot pot . Then there were also a huge variety of fun bite size desserts. This year I decided to go light on desserts so I skipped the cake. A friend had recently got me a gift, matcha (green tea) powder, and I was anxiously waiting to have a chance to use it. What's a better holiday for "bright green" treats other than Christmas? There were matcha mini cheesecakes, matcha macarons, red velvet macarons, and the creamiest caramel flan. As the end result, green seems to be the dominate color at this year dinning's table.

Woodland theme screams for a natural, forest look that yields an extremely cozy feeling. This is the simplest yet elegant cake I have made this year, and I love how it was almost all "white" to resemble the snowy winter we are currently experiencing here at the Pacific Northwest. Just a few days ago, I was still flipping through websites for ideas, and nothing seemed to fit what I am trying to convey in this year Christmas cake. I freaked out when I was two days away from having to decorate the cake and I have yet selected the theme or able to envision how the cake would look like. This is unlike me, and I was extremely stressing out. It is not easy when I have a gazillion other holiday obligations, including putting up the Christmas tree, getting presents for more than thirty people of both families and making gifts for the kids' teachers before they take off for the Winter Break. Thankfully, I came across an article embedding the new wedding trends of natural wood throughout the event and it hit me...this would perfect for the cake for the clinic Holiday Party.
Are you ready for Christmas? It's starting to feel and look more like Christmas in Oregon. We just had our first snow storm a few days ago with freezing rain and skin-tearing wind that sent chills down your spine, which has marked the beginning of this year winter. It is considerably early for us to have snow this time of the year. I had to leave work early to make it home before the horrible icy rain hits the roads. Fortunately, everyone in my family made it home safely that night. After dinner, we gathered around the fireplace and watched a family movie together. Surrounded us were with the freshness smell of our newly cut Christmas tree, the sound of the burning woods crackling from our fireplace along with the warm taste of chocolate milk and marshmallows melting in our mouths—a pleasantly peaceful night. And suddenly, I started to crave for some cakes…
It was the perfect night to bake. I have been wanting to modify the vanilla cake recipe and this is the best opportunity. I have the dry ingredients prepared a few weeks ago, so all I had to do was to turn the oven on and get to work. With my husband's slight encouragement, I finally got to master my white cake recipe that night. Yep, even with the kids at home! |
