Tiramisu Trifles

Do you want to whip up a dessert within minutes? Are you in need of something quick for a party and don't have time to make dessert? Are you craving for something sweet but too lazy to turn on the oven? If you answered yes to one of the above questions, this dessert is for you! Within matter of minutes, you can have an amazing dessert that will leave your guests (or stomach) begging for more.
I love most tiramisu desserts, including tiramisu cheesecake and tiramisu macarons. I bought a pack of ladyfingers a few months ago in attempting to make tiramisu cake, but I still haven't had a chance to do so. But here I am, making the most delicious tiramisu trifles, and I am grateful to have some ladyfingers on hands.
This dessert was made for my husband's birthday two weeks ago. I just realized that I was so involved with caring for the kids that I forgot to spend some time for showing some appreciations for my husband. Last Monday was his birthday, and if you know us, he always had a birthday cake ever since we started dating. I remembered a few birthday celebrations together back then, I went all out with days of planning, there were handmade cards, 1000 of hand-folded origami cranes, special dinner and expensive gifts...And either of us knew that those days are gone forever the moment we welcomed out first newborn into our lives. We win some and we lose some. This is clearly a true statement.
I am just recouped from my son's birthday party and I needed a break before diving into another birthday party in November for my daughter. And of course there were other birthdays in between. I forgot to do anything for my husband; call me heartless, but it was partially because he doesn't care about birthday celebrations or special dinner. I offered to take him out to dinner but he wanted to stay home for a casual sinner since it's a weekday. Monday came and I felt extremely guilty for not planning anything for him. So, I rushed home an hour early to prepare for something... I had exactly 3 hours to make dinner and dessert, while showering for the kids and overseeing them practicing piano. I literally had 30 minutes to make this dessert and it was the best decision on that day, because it turned out so delicious that I finished one all by myself right after we blew off the candle.

MAKING WHIPPED CREAM
I started with the heavy whipping cream first. In a clean mixing bowl, I beat the heavy whipping cream using a stand mixer for about 2-3 minutes on medium high speed (Speed no. 6 on a Kitchen-aid mixer). I added the coffee extract and continued to beat for another 1-2 minutes or until medium peak forms. I poured 3/4 of the whipped cream into a clean bowl and set it aside. Next, I added the creamy liquor and beat the 1/4 remaining whipped cream for another 30 seconds or until combined. I poured this whipped cream into a pastry bag fitted with a Wilton closed-star tip and set aside.
MAKING MASCARPONE FILLINGS
In the same mixing bowl, I beat the mascarpone cheese with granulated sugar on medium high speed for about 3-4 minutes or until well-combined. Do not over beat mascarpone cheese or it will thin out. Then I poured the 3/4 whipped cream I made earlier back into this mixture and gently folded them together until the mixture becomes smooth and homogeneous. I poured this mascarpone filling into a pastry bag fitted with another Wilton closed-star tip and set aside.
MAKING THE COFFEE MIXTURE
The last thing I made was the coffee mixture. I poured about 1 cup of hot water into a clean bowl, added the instant coffee powder and mixed thoroughly. You could add some granulated sugar here if you want your trifles to be more sweet. I like my trifles the way they are without adding the extra sugar.

To layer these trifles, I first cut the ladyfingers in half to better fit my wine glasses. You may break them into three parts if your glasses are smaller. I dipped the ladyfingers into the coffee mixture for about 1-2 seconds, just enough for some coffee to absorb and then quickly placed them in the clean glass. If you soak the ladyfingers for too long, your trifles will become very soggy. Next, I piped the mascarpone filling on top of the ladyfingers layer. I filled some of the hollow areas around the bottom of the glass as well. I repeated with another layer of ladyfingers and mascarpone filling until the layers covered the entire height of the wine glass.
Finally, I topped the trifles with the whipped cream and cocoa powder. I stored these tiramisu trifles in the fridge for about 1 hour before serving. I kept them in the fridge for about 3 days and they still tasted amazing.

See how quickly you can make this dessert without having to turn on the oven? I was able to finish my steak dinner, made some homemade mashed potatoes, put these trifles together while caring for the kids within 2.5 hours.
My husband did not get a standard birthday cake and he is fine with that. But he did get a delicious dessert and "something" to place a candle on and to sing the happy birthday song for. The kids helped blow out the candles and we swallowed this trifle immediately after the candlelight was out.
Tiramisu desserts are not my kids' favorite. But I do not expect the kids to like them with the smell of coffee and all. I mainly make these for my sister and my nephew, who are old enough to enjoy the flavoring of this amazing dessert. A few days later, my nephew told me that this "was the most amazing tiramisu dessert" he had in a long time.

Tiramisu Trifles Recipe

Ingredients
- 2 cups of heavy whipping cream
- 1 teaspoon of coffee extract
- 2 tablespoons of cream liquor
- 1 1/2 cup of mascarpone cheese
- 3 tablespoons of granulated sugar
- 1/2 cup of hot water
- 2 tablespoons of instant coffee powder of your choice
- 8 ladyfingers, break in halves
- Coco powder for dusting, optional
Instructions
- In a clean mixing bowl, whisk heavy whipping cream and coffee extract on medium speed for about 3-4 minutes, or until stiff peaks form. Remove 3/4 of this whipped cream into another clean bowl.
- To make whipped cream, add cream liquor in to the 1/4 whipped cream and continue to whisk for another 1 minute or until combined. Pour this portion into a pastry bag fitted with a closed-star Wilton tip and set aside.
- To make mascarpone filling, in the same mixing bowl, whisk mascarpone cheese and granulated sugar for about 2-3 minutes, or until combined. Do NOT over beat or mascarpone cheese will thin out. Add the 3/4 whipped cream back into the mascarpone cheese mixture and gently fold them together until smooth. Pour this into a pastry bag fitted with a closed-star Wilton tip and set aside.
- To make the coffee mixture, in a small clean bowl, mix together hot water and instant coffee powder until combined.
- To layer the trifles, break the ladyfingers in half and dip them into the coffee mixture one at a time, and place into the bottom of the wine glass. Pipe a layer of mascarpone filling on top of the ladyfingers. Repeat another layer of ladyfingers and mascarpone filling. Then, pipe a swirl of whipped cream on top of each trifle. Sprinkle with cocoa powder if desired.
- Refrigerate trifles until ready to serve, or up until 2-3 days.
